- Prepare 1 kg fine bulgur "Köftelik Bulgur"
- Make ready 1 litre hot water plus 150 ml more
- Make ready 3-4 spring onions cut into very fine rings
- Prepare 2 small to medium-sized green pointed peppers cut into very fine cubes
- Make ready 1 medium-sized tomato, finely diced
- Prepare 100 g ground walnuts *
- Prepare 200 g sweet or hot paprika pulp (alternatively also tomato paste)

- Make ready 100 ml olive oil
- Take 2 heaped tablespoons of dried mint
- Prepare 1 heaped tbsp curry powder
- Make ready 1 tbsp paprika sweet
- Get 1 EL Isot fermented peppers Preparation *
- Prepare 1 tbsp ground white pepper
- Make ready 2 teaspoons cumin
- Get to taste Chilli
- Get 2 teaspoons salt
- Take to taste Fresh parsley, very finely chopped
- Make ready 1 lettuce washed and patted dry for serving
It is especially famous in Turkey's South East, especially Urfa. They are great as finger food for in between or as a main meal. Instructions to make Vegan Çiğ köfte:
- For vegan Cig Köfte, put the bulgur in a large bowl and pour 1 liter of hot water over it. Stir everything with a spoon, cover with a clean kitchen towel and let soak for about 10 minutes.
- Add spring onions, pointed peppers, tomatoes, ground walnuts, paprika pulp, tomato paste, olive oil and spices and knead everything very well with your hands (put on gloves). If necessary, add more salt and spices to taste. Finally add the parsley and knead everything again.
- If the vegan Cig Köfte mass is too dry for you, pour another 150 ml of hot water (or as required) over it at the end.
- Now cover it up and let it rest for about 30 to 45 minutes. Moisten your hands, knead small meatballs from the mixture and serve vegan Cig Köfte with lettuce leaves.
