I wanted a chorizo that is tangy, rich, and complex. In short, I wanted nothing less than the best darned. Nothing beats a breakfast of huevos con chorizo, warm corn tortillas and salsa molcajeteada. Of course as a vegan, there aren't many chorizo options.

Steps to make Vegan chorizo:
  1. Slice the sausages into ~2cm thick pieces. Fry them in olive oil for 5mins until golden. Sprinkle over the paprika, cayenne pepper, fennel, salt and pepper.
  2. Peel and finely chopped the garlic, then add it to the pan. Fry for another 2mins. Add the wine and maple syrup to the pan and cook until the wine has reduced. Toss the sausages in the sticky glaze to ensure full coverage.
  3. Serve and enjoy
