- You could also mix in some mirin if you prefer it sweet. Since everyone has different taste preferences, adjust the seasoning to taste.

Delicious and crispy homemade pickled cabbage enjoyed with a traditional Japanese meal, brined in salt, kombu strips, and chili flakes. Rinse the steamed cabbage leaves under cold water to cool.
