  2. Put the radicchio / chicory into an oven proof dish. Drizzle the oil over the top and make sure the leaves are coated. Especially the radicchio. Season. Roast for 15-20mins.
  3. For the dressing: mix all the ingredients together in a small dish.
  4. When the radicchio/ chicory is ready, layer on a plate. Add the pear slices. Crumble some cheese if using on top and sprinkle the walnuts on top too.
  5. Drizzle the dressing over everything. Sprinkle some parsley on the top and enjoy 😋

Remove to a plate, place Manchego and pear slices on top and drizzle with dressing.
