- Slice the cauliflower into florets. On a large baking tray, toss the cauliflower with turmeric, cumin and oil olive. Add salt to taste.

- To make the dressing, in a hand blender blitz together the coriander, parsley, green chili, garlic and yogurt and the remaining 1/4 cumin powder and lemon juice. Add salt to taste and lemon zest.
- In a large bowl, while still hot, gently toss the cauliflower with the spinach. Sprinkle the feta and pomegranate seeds on top with the dressing.
Remove from oven and let cool slightly (I prefer this as a warm salad). Place cauliflower (slices and crumbles) and garlic on a rimmed baking sheet and drizzle with olive oil. Sprinkle with fennel seed, turmeric and red-pepper flakes, and season with salt and pepper.
