- Take 500 gm boneless Chicken
- Make ready 1 cup Pomegranate arils

Pour marinade over chicken, either in a bowl, glass Tupperware, or resealable plastic bag. Place the chicken breasts in a baking dish large enough to hold them in a single layer, and drizzle the chicken with the olive oil. Top the chicken evenly with the sliced garlic, and sprinkle with the ginger and cinnamon. With a kitchen shears, cut out the backbones from the chicken, starting at the neck and cutting along both sides of the backbone.
Instructions to make Pomegranate Chicken:
- Cut skinless and boneless chicken into 1" broad strips.
- Place the chicken pieces to a mixing bowl and add in 1 teaspoon sumac powder, 1 teaspoon kashmiri red chilli powder, 1 tablespoon ginger-garlic paste and salt.
- Mix well with your hand, cover and set aside for an hour to marinate.
- Take fresh pomegranate arils and blend them to make juice. I added a small piece of beetroot to enhance the colour of juice.
- Transfer to a sieve to separate seeds from the pomegranate juice. Set aside the extracted juice.
- After an hour of marination, take out the chicken pieces. Heat a skillet with 1 tablespoon of olive oil and add in the chicken pieces.
- Cook in high heat for 5-6 minutes to make the pieces light brown.
- Add in half of the pomogranate juice to the chicken.
- Stir well, cover and cook in medium heat for another 5 minutes.
- After 5 minutes, remove the lid, stir and add in 1 teaspoon of honey. Mix well. Add in salt if necessary.
- Now mix 1 tablespoon of cornflour to remaining pomogranate juice.
- Add in to the chicken, give a last stir.
- Sprinkle some chopped coriander leaves and remove from heat.
- Delicious, healthy stir fried pomegranate chicken is ready now. It's little sweet with some tartness from pomegranate and sumac.
- I served this special chicken dish with some saffron flavoured jewel rice.
Top the chicken evenly with the sliced garlic, and sprinkle with the ginger and cinnamon. With a kitchen shears, cut out the backbones from the chicken, starting at the neck and cutting along both sides of the backbone. Lay the chicken flat, skin side down on the cutting surface. Cut the chicken in half through the breast bone. Remove bay leaf and pour the pomegranate-wine sauce/broth over the chicken thighs in the roasting pan.
