The ingredients needed to make Stuffed brinjal:
  1. Get 7-8 brinjal
  2. Prepare 1 chopped onion
  3. Get 1 tsp sesame seeds
  4. Take 1 tsp poppy seeds
  5. Get 2tsp Niger seeds
  6. Get 1 tsp peas or ground nuts
  7. Prepare 1 tsp chickpeas or midget
  8. Get 2 tsp dry coconut powder
  9. Take 2 green chillies
  10. Prepare 1 tsp salt
  11. Make ready 1/4 tsp turmeric powder
  12. Take 6 tsp oil
  13. Prepare 1/2 tsp mustard
  14. Take 1/2 tsp jeera
  15. Get 6-7 curry leaves
  16. Make ready 2 tsp chopped coriander leaves
  17. Take 1 tsp tamarind juice
  18. Take 1/2 tsp jaggery powder

Generally for any stuffed brinjal recipe, the stems are held intact and the stuffing is done from the bottom. But Manasa cuts the top off and stuffs it from the top. I thought this way of cutting was genius. It did not break down during cooking.

Instructions to make Stuffed brinjal:
  1. Cut brinjal only one inch in middle like + mark to fill the masala & keep it in water. Roast poppy seeds, Nigella seeds, sesame seeds & keep it aside. Roast ground nuts, midget or chickpeas, dry coconut powder, chopped onion, green chillies & keep it aside. Make powder of Nigella seeds, sesame & poppy seeds & keep it aside.then make a fine paste of ground nuts, midget, dry coconut powder, chopped onion and green chillies.
  2. Heat 2 tsp oil in a pan on low flame. Add dry powder and onion paste saute well add salt, turmeric powder and tamarind juice and off the gas stove. Remove brinjal from water, fry brinjal in another pan with two tsp oil, & cover the lid, keep it for two minutes. Then off the gas & allow it to cool. After cool fill the masala in brinjal & keep it in one plate. Take a pan & heat 2 tsp oil on low flame, add mustard, jeera, curry leaves & keep stuffed brinjal one by one. Add gravy too,
  3. Add half cup water & cover the lid. Allow it to boil for ten minutes. Then off the gas garnish with chopped coriander leaves & serve with roti or rice. This is best combination with jowar roti here.

I thought this way of cutting was genius. It did not break down during cooking. For the Ennai Kathirikkai - Stuffed Brinjals Heat oil in a pan and add in the stuffed brinjal. Add a cup of water to the remaining ground masala paste to dilute the paste. Add the remaining paste to the pan.
